SOUTHWESTERN POTATO CASSEROLE 
6 lg. potatoes
1 (8 oz.) Velveeta cheese
1 pt. sour cream
1/2 lb. Longhorn cheese
1 stick butter
1 can sliced black olives
1 c. diced green chilies
1/2 c. diced green onions
1/2 c. diced pimiento
Salt to taste
Pepper to taste
Garlic powder to taste

First you would peel and slice the potatoes about 1/2 inch wide and boil them until they are a little soft. Then you would need a large deep dish, Pyrex or casserole dish. Add 1/2 your cooked potatoes, then add 1/2 stick of butter, spread over the potatoes, then add your salt, pepper and garlic powder to your taste. Then add 1/2 the pint of sour cream on top spread evenly.

Then your 1/2 of 8 ounce Velveeta cheese, sliced evenly on top, then sprinkle 1/2 Longhorn cheese, then add all the remaining ingredients; sprinkle 1/2 your green onions, 1/2 your green chilies, then 1/2 pimientos, then add 1/2 your sliced black olives. Then bake in oven at 350 degrees for 20-25 minutes until the cheese all melts on top. Then you enjoy!
