CHEESE AND POTATO CASSEROLE 
8 potatoes
1 lb. shredded Velveeta cheese
1/2 c. chopped onion
1 c. mayonnaise
1/2 lb. bacon - pre-cooked and cut in pieces
Green or black olives, sliced for garnish

Peel, cube and boil potatoes - cook until partially done then drain (approximately 20 minutes). Mix potatoes in large bowl with cheese, onion and mayonnaise. Pour into 9 x 13 inch pan and garnish with bacon and olives. Bake uncovered at 350 degrees for 1 hour.
