WATERMELON PICKLE 
4 lbs. watermelon rind
2 lbs. sugar
1 pt. vinegar
Mace, cloves, cinnamon and ginger to taste

Peel the rind and cut into pieces. Boil in ginger tea until clear, then throw in cold water overnight. Next morning, make a syrup and preserve the rind. Just before taking off the fire, pour in the vinegar.
