PUMPKIN BREAD 
2 c. sugar
3/4 c. oil
4 eggs
1 (16 oz.) can pumpkin
3 1/3 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 tsp. pumpkin pie spice
1 tsp. cinnamon
1 tsp. nutmeg
2/3 c. water
2 tsp. vanilla extract
1 c. chopped pecans (optional)

Mix sugar, oil, eggs (one at a time) and pumpkin. Combine flour, soda, baking powder, salt, pumpkin pie spice, cinnamon and nutmeg. Add to pumpkin mixture. Add water and vanilla. Stir until well blended. Add nuts and pour into 2 greased and floured loaf pans.

Bake in a preheated 325°F oven for 1 hour.
