RICE PRIMEVERA 
2 tbsp. butter
1 1/2 c. fresh vegetables, such as celery, carrots, broccoli, peppers, peas
1 sm. onion
1 1/2 c. chicken broth
2 tsp. basil leaves
1 1/2 c. uncooked rice, long grain
2 tbsp. grated Parmesan cheese

Soak vegetables and onion in butter until tender. Add chicken broth and basil leaves. Bring to a boil, stir in rice. Cover and remove from heat. Let stand 5 minutes or until water is absorbed. Sprinkle with cheese before serving. Makes 4 to 6 servings.
