SWEET POTATO BALLS 
4 lg. sweet potatoes
1 tsp. grated orange rind
2/3 c. brown sugar
4 to 6 tbsp. orange juice
12 lg. marshmallows
Toasted coconut

Cook and mash sweet potatoes. Set aside and cool. When cool, add orange juice and rind and brown sugar. Roll around 1 large marshmallow. Then roll in toasted coconut. Bake for 15 to 20 minutes at 350 degrees. Makes 8 to 12 sweet potato balls.
