FRENCH QUARTER OYSTER SANDWICH 
1/2 pt. shucked oysters
1/3 c. flour
1/2 tsp. salt
1 tbsp. water
1 loaf French bread
1/2 c. fine bread crumbs
1 c. butter, melted
Dash cayenne pepper
1 egg, beaten

Drain oysters; dry with paper towels. In bowl, combine flour, salt and pepper. Coat oysters well with flour mixture. Dip oysters into mixture of egg and water; roll in bread crumbs.

In hot skillet, fry oysters in half of melted butter until golden brown, about 5 minutes.

Remove a thin slice from top of French bread. Hollow out loaf, leaving about 1/2 inch all around. Brush with remaining butter. Bake loaf at 400 degrees until golden brown (5 minutes). Fill with hot fried oysters. Top with bread top. Serves 3-4 people.
