BOURBON SWEET POTATOES | |
6 med. sweet potatoes, (4 lbs.) we used 3 large cans 1/2 c. melted butter 1/2 c. firmly packed brown sugar 1/3 c. orange juice 1/4 c. bourbon 1/2 tsp. salt 1/2 tsp. pumpkin pie spice, we use ginger 1/2 c. pecans Cook, peel and mash potatoes. Combine potatoes with remaining six ingredients. Spoon mixture into lightly greased baking dish (we needed 2). Bake at 375 degrees for 45 minutes. Arrange pecans before baking. Yield: 8 to 10 servings (we served 25). |
