SWEET POTATO SOUFFLE 
1 can sweet potatoes, drained and mashed
2 tbsp. butter
1/2 tsp. vanilla
1/4 c. milk
1/4 tsp. cinnamon or pumpkin pie spice
2 tbsp. brown sugar

Beat until fluffy. Put in greased 1 quart casserole. Bake in 350 degree oven for 15-20 minutes until heated through. Add miniature marshmallows on top and return to oven to brown.
