SWEET POTATO PIE | |
1 (16 oz.) can sweet potatoes (drained) or 3 c. cooked sweet potatoes, mashed 2 tbsp. flour 1 1/2 c. sugar 1/2 c. melted butter 1/2 to 1 c. evaporated milk (do not make soupy) 2 tsp. vanilla 2 tsp. nutmeg 1/2 tsp. pumpkin spice 1/4 tsp. salt 3 eggs Mix all ingredients together, using electric mixer at medium speed. Pour equal amounts into 2 ready made frozen pie crusts or homemade pie crusts. Bake in 375 degree oven for 45 to 50 minutes until center of pie is firm. Do not overbake. |
