CHRISTMAS RED VELVET CAKE
(CUPCAKES)
 
1/2 cup (1 stick) unsalted butter (at room temperature)
2 large eggs (at room temperature
1 cup white granulated sugar
2 1/2 cups all-purpose flour
1 cup buttermilk
1/3 cup unsweetened cocoa powder
1 tbsp. cider vinegar
red gel food coloring (no flavor)
1 tbsp. pure vanilla extract
1 tsp. baking soda

Preheat oven to 375°F.

Cream butter, eggs and sugar on medium until fluffy. Slowly add flour until blended, then slowly add buttermilk and mix for 1 minute; set aside.

In a small bowl mix cocoa powder, vinegar, food coloring, vanilla and baking soda and mix into batter until blended. You may add more food coloring if the red isn't deep enough. Pour into cupcake liners 1/3 full.

Bake at 375°F for 15 to 20 minutes or until toothpick comes out clean. Cool for 20 minutes on wire rack.
