APPLE - OAT BREAD | |
Vegetable cooking spray 1 1/2 c. uncooked quick cooking oats 1 1/2 c. all-purpose flour 1 1/2 tsp. baking soda 1 1/2 tsp. cinnamon 3/4 tsp. allspice 1/2 c. honey 1/2 c. skim milk 1/4 c. salad oil 3 egg whites 3 med. unpeeled green apples, diced Heat oven to 350 degrees. Spray 8 1/2 x 4 1/2 inch loaf pan with vegetable spray. In large bowl mix oats, flour, soda, cinnamon, and allspice. In small bowl, beat honey, milk, oil and egg whites until blended; stir into flour mixture just until flour is moistened. (Will be lumpy.) Fold in apples. Spoon batter into loaf pan. Bake 65 minutes, or until toothpick comes out clean. Cool bread on wire rack 10 minutes; remove from pan; cool completely on wire rack. Serves 12. 210 calories; 1 g. saturated fat; 0 mg cholesterol per serving. |
