CREAMY SCALLOPED POTATOES 
3 tbsp. butter
3 tbsp. flour
2 1/2 c. milk
1/4 tsp. pepper
Dash salt
4 c. pared and thinly sliced potatoes
1/4 c. finely chopped onion
1/2 tsp. parsley flakes
1/2 to 1 c. cheese grated, optional

Melt butter in saucepan. Add flour and seasonings mix well. Add milk slowly. Cook stirring constantly until mixture comes to a boil. Cook for an additional minute stirring constantly. In a 2 quart baking dish layer 1/3 potatoes, 1/3 of the sauce, 1/2 of the onions, 1/3 of the cheese. Repeat. Last layer will be the remaining potatoes, sauce, and the cheese. Cook 30 minutes covered. Then cook an additional 60 to 70 minutes uncovered. Or until potatoes are tender. Bake in a preheated oven at 350 degrees.
