TOP NOTCH BRAN MUFFINS 
1 egg
1/4 c. molasses
1/4 c. vegetable oil
1/4 c. honey
1 c. milk
1 1/4 c. whole wheat flour or reg. flour
1 c. wheat bran
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon

Preheat oven to 350 degrees F. Grease bottoms only of 12 medium muffin cups or line with paper baking cups.

Combine egg, molasses, vegetable oil, honey and milk in a large bowl and beat until mixed. Add flour, wheat bran, baking powder, salt and cinnamon and stir just until dry ingredients are moistened. Then add a chopped up apple and about a half cup of raisins and fold into the mix. Fill prepared cups 2/3 full. Bake 20 to 22 minutes or until golden brown.

VARIATIONS:

1. Add a cup of blueberries instead of the apple and raisins.

2. Add one mashed banana and 1/4 cup of chopped nuts instead of apple and raisins.

3. Be creative.
