CINNAMON - TOPPED OATMEAL
MUFFINS
 
1 c. flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. oats
1/2 c. raisins
3 tbsp. oil
1 egg, beaten
1 c. milk

TOPPING:

2 tbsp. sugar
2 tsp. flour
1 tsp. cinnamon
1 tsp. melted butter

Mix flour, sugar, baking powder and salt. Stir in oats and raisins. Add oil, egg and milk. Mix all together. Mix topping separate. Put muffins in greased pan, sprinkle topping on. Bake at 425 degrees for 15 minutes.

the crumb topping was good but the muffins lacked flavor. I omitted the raisins, so this may have been the problem.

Hi Jennifer,

For extra flavor, use butter instead of the oil and add a teaspoon of vanilla or other flavoring to the batter. The raisins can be soaked in the milk for 30 minutes before baking, too. Heat the milk until scalding (not boiling) before adding the raisins to soak.
