CHEESECAKE CUPCAKES 
24 vanilla wafers
3/4 c. sugar
16 oz. cream cheese, softened
2 tsp. lemon juice
2 eggs
1 tsp. vanilla extract
1 (21 oz.) can cherry pie filling

Place 1 vanilla wafer in bottom of each paper lined muffin cup. Combine sugar, cream cheese, lemon juice, eggs, and vanilla in bowl; mix well. Spoon into prepared muffin cups. Bake for 20 minutes. Remove to wire rack to cool. Top with pie filling. Yields: 24 servings.
