PAT'S IRISH BREAD | |
4 c. flour 4 tsp. baking powder 3/4 c. sugar 1/2 tsp. salt 3/4 tsp. caraway seeds 1/2 c. each raisins and currents (I use just raisins) 8 tbsp. butter 1 egg beaten (I use 2 eggs) 1 c. milk Note! Grease pan. If you have a black cast iron frying pan, this is the best to use. Sift flour once (if necessary). Measure and sift again with baking powder, sugar and salt. Cut in shortening, then add caraway seeds, raisins, beaten egg and milk gradually. Mix well. Place in greased frying pan (black if available). Bake 1 hour at 450 degrees. Baking time depends on oven. Mine is usually done in 45 minutes. I use enough milk and eggs to mix the dough so that it kneads easily and is not crumbly in the dish. By using 2 eggs plus milk I sometimes have a few tablespoons left over. I also use the presifted or all-purpose flour. |
