HONEY AND LEMON ROASTED CHICKEN | |
Works with all brands of air fryers. 1 (3 lb.) whole chicken 1 cup honey 1 large lemon Chicken Stuffing (optional): 1 red onion 1/2 green zucchini 1/2 yellow summer squash 1 apple 1 dried apricot 2 garlic cloves, finely chopped 2 sprigs thyme, finely chopped 2 tbsp. olive oil pinch of salt pinch of pepper For the stuffing, cut red onion, zucchini, yellow summer squash, apple and dried apricot into small cubes. Add finely chopped garlic cloves and freshly chopped thyme. Mix with the olive oil, salt and pepper. Stuff the chicken with this mixture. Air Frying: Sear the whole chicken in the air fryer for 10 minutes at 400°F. In a pan, melt honey and the juice of the lemon. Add salt and pepper to taste. Remove the chicken from the air fryer, drizzle it with part of the honey mixture. Set the air fryer to 275°F. Place the chicken in the air fryer. Drizzle every 15 minutes with the honey mixture until it's used up. Cook for a total of 1 hour or until done. Serves 4. |
