LAMB CHOPS WITH HEIRLOOM
VEGETABLES
 
Works with all brands of air fryers.

Lamb Chop Marinade:

4 lamb chops
1/2 cup fresh mint, finely chopped
1 tbsp. fresh rosemary, finely chopped
3 tbsp. olive oil
salt and pepper

Finely chop mint and rosemary and mix with olive oil. Add salt and pepper to taste. Marinate lamb chops in mixture for at least 3 hours.

Vegetable Side Dish:

1 parsnip
2 carrots
1 purple carrot
1 fennel bulb

Cut parsnip, carrots and fennel into small cubes, and place in a bowl of water.

Sear the lamb chops for 6 minutes at 400°F in air fryer basket, then remove and set aside.

Drain cubed vegetables, place in air fryer basket and cook for 6 minutes at 350°F. Add lamb chops and fry for 6 minutes at 350°F. Serve with mashed potatoes and rosemary.

Serves 4.
