PRIME RIB WITH BACON AND HERBED
TOMATOES
 
Works with all brands of air fryers.

1 (1 lb. 10 oz.) prime rib
10 tbsp. chopped fresh rosemary
8 tbsp. freshly chopped thyme
2 lb. white potatoes
1/2 lb. whole fresh mushrooms
1 tbsp. peanut oil
2 medium onions
3/4 cup chopped raw bacon
1 tbsp. olive oil

Note: Take prime rib out of the refrigerator at least 1 hour in advance.

Finely chop fresh rosemary and thyme and set aside. Boil white potatoes. Clean mushrooms.

Sprinkle peanut oil on potatoes and fry in air fryer for 10 minutes at 400°F. Roughly chop onions and mushrooms. Add to the potatoes along with the chopped bacon and the chopped herbs. Bake another 7 minutes at 400°F. Give air fryer basket a shake every now and then.

Rub room temperature prime rib with olive oil. Remove potatoes from air fryer, set aside in a covered dish. Place prime rib in air fryer and bake for 10 minutes at 400°F. Spoon potatoes, bacon, and herb mixture over prime rib and bake together for 10 minutes at 400°F. Add salt and pepper to taste.

Serves 6.
