PUMPKIN OR PEANUT CHOP 
Chopped hot peppers
1/2 c. chopped onion
2 tbsp. oil
1 sm. can tomato paste
1 bouillon cube (chicken)
Fish of choice (haddock, perch, tuna, salmon)
1 can pumpkin pack or 1 (18 oz.) jar chunky peanut butter
1 c. dry rice

Brown onion and peppers in oil. Add paste and cube and fish. Simmer 15 to 20 minutes unless fish is already cooked. Add and heat either pumpkin or peanut butter. Stir and add water if dry and simmer 10 minutes more. Serve over cooked rice. Serves 4 or 5 people. (West African dish - Liberia.)
