ZUCCHINI BREAD 
4 eggs
1 c. cooked, mashed zucchini
2/3 c. water
1 c. salad oil
3 1/3 c. sifted flour
3 c. sugar
1 1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg

Combine all ingredients and beat with beaters until smooth. Pour into 3 medium sized bread pans that all well greased and floured. Bake at 350 degrees about 1 hour or until fork comes out clean. Pumpkin or winter squash may also be used.
