OATMEAL PUMPKIN BREAD 
1 c. quick cooking oats
1 c. hot low fat milk
3/4 c. cooked or canned pumpkin
2 beaten eggs
1/4 c. butter
2 c. all-purpose flour
1 c. sugar
1 tbsp. baking powder
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 c. raisins
1/2 c. pecans, chopped

Preheat oven to 350 degrees. In a large bowl combine oats and milk. Allow to stand about 5 minutes. Stir in pumpkin, eggs and butter.

In a separate bowl mix together flour, sugar, baking powder, salt and spices. Gradually add dry ingredients to oatmeal. Mix well. Stir in raisins and nuts. Place in a greased 9 x 5 inch loaf pan. Bake 55 to 60 minutes or until done. Cool on a wire rack. Makes 1 loaf, about 16 slices.
