ZUCCHINI CASSEROLE 
3 c. sliced zucchini, sliced thin with skins on
1 c. Bisquick
1/2 c. chopped onion
4 eggs
2 tbsp. parsley
1/2 tsp. salt
1/2 c. oil
1/2 c. Parmesan cheese

Let sliced zucchini stand 1/2 hour. Squeeze out liquid. Beat eggs. Add Bisquick, salt, onions, oil, cheese and parsley. Mix together by hand. Fold in zucchini. Pour in greased casserole. Bake at 350 degrees for 30 to 35 minutes.
