APPLE RAISIN PIE 
Use your favorite recipe for a 2 crust, 10 inch pie.

FILLING:

7 to 8 c. tart apple slices, thinly cut
1 c. sugar
1/2 c. flour
1/2 tsp. nutmeg
1 tsp. cinnamon
3/4 c. golden raisins (regular will do)
1 to 2 tsp. grated lemon rind
1 tbsp. butter
3/4 c. cream

Place one crust in the bottom of pie pan and set aside. Combine apples, sugar, flour, spices, raisins and lemon rind. Gently mix thoroughly. Place filling in pie shell and dot with butter. Cover with second crust. Be sure to have steam vents and seal edges well. In center of top crust, cut a hole 1 1/2 inches wide.

Bake for 40 minutes at 400 degrees. Remove from oven and slowly pour cream into the center hole of pie. Return to oven and bake for 5 to 10 minutes longer. Let stand for 10 minutes before serving.
