FISH AND WILD RICE 
2 lbs. skinned fish fillets
1 c. chopped mushrooms
1/4 c. chopped onion
1/4 c. chopped celery
1 box Uncle Bean's white and wild rice

Prepare rice as directed on package. Meanwhile, saute mushrooms, onions and celery in a small amount of butter. Combine these mixtures and spread over fish in shallow baking pan. Drizzle with 2-3 tablespoons melted butter, cover, and bake 20 minutes at 350 degrees. Serves 4-6.
