DAY AHEAD LETTUCE SALAD 
Arrange the following in large plastic covered container:

1 head lettuce, shredded
Several stalks celery, sliced
1 can water chestnuts
1 pkg. uncooked frozen peas (do not thaw) use petite peas
2 bunches sliced green onion
2 c. mayonnaise or enough to cover vegetables
Sprinkle 2 tbsp. sugar over all (cover and marinate)

Marinate and refrigerate 8 hours or overnight.

Before serving, dig deep into mixture. Garnish with layer of crumbled bacon (6 to 8 slices). Hard boiled eggs and grated cheese or Colby cheese on top. Serves 6.
