PUMPKIN PATCH BREAD | |
Low Sodium. Makes 2 loaves, 32 slices. 1 orange 2/3 c. warm water 2/3 c. Crisco shortening 2 2/3 c. sugar 4 eggs 1 can (16 oz.) pumpkin 3 1/3 c. all-purpose flour 2 tsp. cinnamon 1 1/2 tsp. salt (optional) 1/2 tsp. baking powder 2/3 c. raisins 1. Heat oven to 350 degrees F. Grease two 9x5x3 inch loaf pans. 2. Cut orange in quarters. Remove and discard peel and white pith from sections. Place all orange sections and water in blender or food processor. Process until smooth. 3. Combine Crisco and sugar in large bowl. Mix with fork or spoon until blended and crumbly. Add eggs. Beat until fairly smooth. Mix in orange puree and pumpkin. 4. Combine flour, baking soda, cinnamon, salt (if used) and baking powder in separate bowl. Add to pumpkin mixture. Stir until dry ingredients are just moistened. Stir in raisins. 5. Pour evenly into pans. Bake at 350 degrees F. for 1 hour and 10 minutes. Cool 10 minutes before removing from pans. Cool completely on wire rack. Slice with serrated knife. |
