APPLE MUFFINS 
4 eggs, beaten
3/4 c. flour, sifted
1/2 tsp. cream of tartar
1/4 tsp. baking soda
3 pkgs. Sweet 'n Low
1 1/3 c. dry non-fat milk
2 1/2-3 tbsp. vanilla
2 c. chopped apples

Mix together and divide evenly into 12 non-stick muffin tins. Mix together 2 tablespoons light brown sugar and 1 teaspoon cinnamon. Spread over muffins. Bake at 350 degrees for 20 minutes.
