APPLE STREUSEL MUFFINS 
2 c. flour
1 c. sugar
1 1/4 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 eggs, beaten
1 c. sour cream
1/4 c. butter, melted
1 1/2 c. diced apples, unpeeled

STREUSEL TOPPING:

1/4 c. sugar
3 tbsp. flour
1/4 tsp. cinnamon
2 tbsp. butter

In a large bowl, stir together flour, sugar, baking powder, soda, cinnamon, and salt. Set aside. In small bowl, beat eggs, sour cream, and butter. Add all at once to dry ingredients. Add diced apples. Stir just until moistened. Fill well greased muffin cups 2/3 full with batter. Combine Streusel Topping ingredients and sprinkle over muffins. Bake at 400 degrees for 20-25 minutes.
