PUNGENT TOMATO SAUCE 
5 tbsp. olive oil
2 yellow onions, chopped
5 cloves garlic, chopped
6 lg. fresh tomatoes, peeled, seeded & chopped
1 (28 oz.) can peeled Italian tomatoes with juice
2 tbsp. chopped oregano
2 tbsp. chopped basil
2 tbsp. chopped thyme
2 tbsp. brown sugar
4 tbsp. chopped Italian parsley

Heat olive oil in a large skillet. Add onions and garlic until caramelized. Add tomatoes. Turn the heat down and add remaining ingredients. Simmer 10 minutes. Spoon over pasta. Serves 4.
