Pie Crust: 2 c. flour 3/4 tsp. salt (1 tsp. = flaky) 2/3 c. shortening Handle dough lightly to prevent sticking, using just enough flour to do so. Never turn or knead crust. Press crust lightly to fit pan. Trim with fork. Filling: 6 c. pared, cored apples 2 c. sugar 1/4 tsp. nutmeg 1/8 tsp. salt 1/4 tsp. cinnamon 1 tsp. lemon juice 2 tsp. butter milk or egg white Slice apples to 1/4-inch thickness in crust-lined pie plate. Add other ingredients and place top crust onto pie plate. Cut several slits in top crust. Brush top with milk or egg white and bake for 40 minutes in 425°F oven. |
