ELLIE'S RAISIN AND NUT COOKIES 
In a saucepan combine 2 cups raisins and 1 cup water. Boil 3 minutes. Set aside to cool. (Do not drain).

Sift:

3 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Cream 1 cup shortening. Add 1 3/4 cups sugar. Beat in 2 eggs. Stir in raisins and liquid and 1 teaspoon vanilla. Gradually add flour mixture. Stir in 1/2 cup nuts (optional). Drop from tablespoon on greased cookie sheet. Bake at 375 degrees for 12 to 15 minutes. Makes 2 1/2 dozen large cookies.
