BROCCOLI 'N CHEESE STUFFED
CHICKEN BREASTS
 
4 - 5 chicken breasts, boneless and skinless
salt and pepper
1 tbsp. butter
1 sm. onion, chopped
1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
1 1/4 c. cheese, shredded (Swiss or Cheddar)
1/4 tsp. nutmeg
paprika

Preheat oven to 450°F. Between waxed paper, pound each breast 1/4 inch thick and season; set aside. In medium skillet over medium heat, sauté onion and broccoli in hot butter for 5 minutes. Remove from heat; stir in 1 cup cheese and nutmeg. Place equal amount of cheese-broccoli mixture in center of each breast. Fold in edges to cover stuffing. Place seam side down in lightly greased baking pan. Sprinkle with remaining broccoli mixture, cheese and paprika.

Bake until chicken is cooked and filling is hot, about 12-25 minutes.

Serves 4 - 5.

This was really good. The high temp. of 450 degrees for 12-25 min. really scared me though after having gone through all the work of pounding the chicken breasts and making the stuffing, Actually, I was wondering if it was a typo because I've never seen a recipe calling for cooking boneless, skinless chicken breast at that temp. I kept an eye on it and cooked it for about 40 minutes to be safe. It was still very moist and was cooked through. I served it over butter/garlic angel hair pasta, topped with a white wine sauce and with sautéed sugar snap peas on the side...it was restaurant worthy! I'll be making this again...thanks for sharing!
