FRUIT NECTAR SALAD | |
1 env. Knox unflavored gelatin 2 tbsp. sugar 1/4 tsp. salt 1 (12 oz.) can apricot nectar 1/2 c. water 8 whole cloves 1 tbsp. lemon juice 1 1/2 c. drained, diced mixed fruits, canned Mix gelatin, sugar and salt thoroughly in small saucepan. Add nectar, water and cloves. Place over low heat and stir until gelatin is dissolved. Simmer for 5 minutes. Remove from heat and strain to remove cloves. Add lemon juice. Place pan in bowl of ice and water or chill in refrigerator to unbeaten egg white consistency. Fold in mixed drained fruits. Turn into a 3-cup mold or individual molds and chill until firm. Unmold on serving platter. Garnish with greens and fruit. Serve with salad dressing. |
