MOIST CHOCOLATE CAKE WITH CHOCOLATE FROSTING | |
Cake: 1/2 c. butter 2 c. sugar 2 c. flour 1 tsp. baking powder 2 tsp. baking soda 3/4 c. cocoa 1 c. milk 1 c. hot coffee 2 eggs, unbeaten 1 tsp. vanilla Frosting: 1/4 c. cornstarch 1/8 tsp. salt 1 c. sugar 1 1/4 c. water 3 sq. unsweetened chocolate, melted 1/2 c. milk 1 tsp. shortening 1 tsp. vanilla To make cake, cream butter and sugar; add dry ingredients. Add milk and coffee slowly. Beat with electric mixer for 2 minutes. Add eggs and vanilla and beat for 1 more minute. Pour into 13x9 inch pan and bake at 325 degrees for 40 to 45 minutes. To make frosting, cook cornstarch, salt, sugar and water until boiling. Mixture will be thick and clear. Add melted chocolate and milk slowly to cooked ingredients. Add shortening and vanilla. Spread cooled frosting over cooled cake. |
