BEEF IN BEER 
2 lb. steak cut into 2 squares
3/4 lb. onion peeled, sliced in
1/4's and separated to layers
1 clove garlic crushed
1 tbsp. olive oil
1/2 tsp. dried thyme
1 bay leaf
1 tbsp. plain flour
10 oz. light beer
Salt
Fresh milled black pepper

Serves 6 to 8, Oven temperature 275 degrees or 140 celsius. Brown meat in hot oil and remove to a plate. Add onions to oil and with high heat toss until brown at edges. Return meat and juices to pan add flour and stir to soak juices. (It will look lumpy this is normal!!) Gradually stir in beer and bring to simmer slowly. Add thyme, bayleaf, garlic and seasonings. When simmering, stir well, put into casserole with tight filling lid, and transfer to middle shelf of oven. Cook at gentle simmer for 2 1/2 hours or until beer has had time to develop into a lovely sauce.
