MEXICAN LASAGNE 
16 oz. ground turkey
4 1/2 oz. cheddar cheese, grated
6 tortillas, 6" size
1/2 c. bell pepper, chopped
1 pkg. taco seasoning
2 c. cottage cheese (1% milk fat)
2 eggs
1/2 c. onions, chopped
2 c. canned tomatoes

Brown turkey with onion and bell pepper; drain. Add tomatoes and dry taco seasoning; simmer 5 minutes.

In separate bowl combine eggs, cottage cheese and 3 ounces grated cheddar cheese.

In an 8"x12" baking dish spoon 1/3 of meat in bottom and top with 3 tortillas, add remaining meat, top with 3 remaining tortillas. Spread cottage cheese mixture evenly over top. Cover and bake 35 to 40 minutes at 350 degrees. Remove top and top with remaining cheese and return to oven until cheese melts.
