SPICY MEXICAN BAKE (LO-CAL) 
1/4 c. diced onion
1/4 c. chopped bell pepper
1 clove garlic
7 oz. ground turkey
1/2 c. canned tomatoes, diced
2 tsp. chili powder
2 tsp. cilantro
1/4 tsp. parsley
6 oz. pared potatoes, thinly sliced
1 oz. shredded cheddar or colby cheese
1 tsp. olive oil
2 tbsp. hot or mild peppers

Preheat oven to 425 degrees. Heat olive oil in skillet; add onion, bell pepper, chili, and garlic. Saute for 2 minutes. add meat and cook until brown. Add tomatoes, chili powder and salt and cook for 1 minute. Spray two 1 1/2 cups casseroles - divide meat mixture evenly. Top meat with 3 ounces of potatoes, brush lightly with olive oil. Bake until potatoes are tender; brown 25-30 minutes. Add cheese and bake 2-3 minutes longer. Serves 2.

NOTE: Just double for 4.
