SOUR CREAMED ROUGHY | |
2 lb. orange roughy fillets Salt and pepper 1/4 tsp. garlic salt 1/3 c. Parmesan cheese 3/4 c. sour cream 1/4 c. fine bread crumbs 1 1/2 tbsp. chopped chives 1 tsp. paprika 1/2 lb. cooked shrimp, for garnish Preheat oven to 400 degrees. Put a large shallow baking pan in oven to heat. Wipe fish with damp cloth and cut into serving size pieces. Remove pan from oven. Grease it and arrange fish in a single layer. Sprinkle lightly with salt and pepper. In bowl, mix together sour cream, bread crumbs, garlic salt and chives. Spread sauce evenly over fish. Sprinkle evenly with Parmesan and paprika. Bake uncovered until fish flakes easily with a fork. Serves 4. Preparation time: 15 minutes. Cooking time: 10 minutes. |
