SPINACH BALLS 
4 pkgs. (10 oz.) frozen, chopped spinach
4 to 4 1/2 c. Pepperidge Farm herbed stuffing
8 eggs, beaten
1 c. Parmesan cheese
1 1/2 c. butter, melted
1 tsp. thyme
2 med. onions, chopped fine
2 cloves garlic, minced

Cook spinach. Drain and squeeze dry. Mix with other ingredients. Chill for 2 hours. Roll into 1 inch balls.

If you choose to freeze them, freeze on cookie sheet, then transfer to plastic bags. To cook, bake for 30 minutes at 300 degrees. If you put everything into a food processor, they come out great too! Makes approximately 120.
