SPINACH BALLS 
2 pkgs. chopped spinach
2 c. stuffing mix (crumb type)
3/4 c. melted butter
1/2 tsp. thyme
1 tsp. garlic salt
1/2 tsp. pepper
6 eggs
1 1/2 lg. onion, chopped fine
1/2 c. Parmesan cheese

Cook spinach and drain very well. Add other ingredients and mix well. Shape into balls. Bake at 375 degrees for 20 minutes.

These freeze very well; it is better to bake them just a little to hold the shape before freezing; then finish when ready to use.

NOTE: If the mixture appears too runny to form into balls, wait a few minutes for the liquid to be absorbed; if necessary you can add more crumbs.
