CARROT WHEAT FRITTERS 
1/2 c. sugar
1 egg
3/4 c. milk
1 tsp. vanilla
1 1/4 c. flour
1 1/4 c. whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. ground nutmeg
2 med. carrots, finely shredded
1 c. light raisins
Cooking oil

In small bowl, combine sugar and egg. Beat well. Stir in milk and vanilla. In large bowl, stir together flours, baking powder and salt and nutmeg. Add milk mixture to flour mixture, stirring to moisten. Stir in carrots and raisins. Drop batter by spoonfuls into hot oil (365 degrees). Fry for 1 to 1 1/2 minutes per side, until lightly browned. Drain on paper towels. Makes 3 1/2 to 4 dozen.
