CARROTS IN ORANGE SAUCE 
1/2 c. slivered almonds
1 tbsp. butter
1 1/2 tbsp. brown sugar
2 tsp. cornstarch
1/4 tsp. salt
1/8 tsp. cinnamon
1/8 tsp. nutmeg
1 c. orange juice
1 tsp. grated orange rind
12 med. carrots, cooked & cut into strips

Saute almonds in butter; set aside. Combine sugar, cornstarch, salt, cinnamon and nutmeg in a heavy pan. Add orange juice and rind; cook, stirring constantly, until thick and smooth. Add almonds. Pour over hot carrots.
