SPINACH BALLS 
2 (10 oz.) pkg. frozen chopped spinach
2 to 2 1/2 c. packaged herb stuffing mix
3/4 c. butter, melted
6 eggs
1/2 c. grated Parmesan cheese
2 sm. onion, minced
Salt, pepper, garlic powder and thyme to taste

Cook and drain spinach VERY WELL. Combine all ingredients and roll into balls (1 teaspoon each). Bake at 350 degrees for 20 minutes on greased cookie sheet. Remove from cookie sheet at once and drain on paper. Divide recipe in half. Freeze and store in freezer pans. To serve, reheat 3 to 5 minutes at 400 degrees.
