BREAD PUDDING | |
2 c. bread (biscuit, sour dough or plain lite bread) 3 eggs 1 c. milk 1 1/2 c. sugar 1 tbsp. vanilla 1 tsp. cinnamon Pinch up bread and put in a buttered loaf pan. Beat eggs, milk, sugar, vanilla and cinnamon. Pour over the bread and let soak. Add more milk to make pudding juicy. Bake at 350 degrees for 45 minutes. Serve with hot lemon sauce, or a hard sauce to which 1/2 cup of soaked raisins may be added. This makes the bread pudding very good. SAUCE: Blend 2/3 cup sugar, 2 tablespoons flour, and 1/8 teaspoon salt. Add 1 cup water, 2 tablespoons butter, 2 tablespoons lemon juice and 2/3 cup raisins (soak in hot water, while mixing pudding). Cook slowly, stirring constantly until sauce thickens. Pour over warm bread pudding and serve. Serves 8 to 10. |
