PEPPER CUBE STEAKS 
4 cube steaks, 1/2" thick
2 tbsp. butter
2 med. onions, sliced
2 green peppers, seeded, sliced
1 red pepper, seeded & sliced
Dash salt
Dash black pepper
1 tbsp. prepared mustard
1 tbsp. tomato paste or 2 tbsp. chili sauce
3/4 c. half & half
Dash Tabasco sauce, optional

1. In a large skillet, melt half of the butter. Saute onion in butter over low heat until soft.

2. Add 1 green pepper and the red pepper. Saute over medium heat for 2-3 minutes until soft but not mushy. Remove contents from pan.

3. Heat remaining butter in the skillet. Brown steaks on both sides over medium heat. Let cook about 3 minutes. Sprinkle with salt and pepper. Remove from pan.

4. To the skillet, add mustard, tomato paste, half & half and Tabasco sauce, if used. Bring to a quick boil. Add onion-pepper mixture.

5. Pour sauce mixture over steaks. Garnish with remaining green pepper. Serve immediately.

Good served with: Rice or noodles and steamed broccoli or cauliflower.

Health Note: To reduce fat, cholesterol and calories, substitute nonfat milk or chicken broth for half & half.
