PEPPERED CUBE STEAK 
2 tsp. coarse grind pepper
1/2 c. flour
Salt
4 cube steaks, about 1 1/2 lbs. total
2 tbsp. oil
1 c. beer
2 tbsp. Dijon mustard

Combine the pepper, flour and 1 teaspoon salt. Dredge steaks in flour mixture. Heat oil in large frying pan over medium-high heat. Add steaks and cook until done, 2 to 3 minutes per side. Remove. Add beer to pan. Bring to boil. Scrape up browned bits from bottom of pan. Continue boiling to 1/2 cup (about 3 minutes). Remove the pan from heat, stir in mustard. Pour mustard sauce over steaks and serve. (4 servings.)
