SPANISH CAULIFLOWER 
Wash 1 head of cauliflower and separate into flowerettes. Place in a pan with a small amount of salted water. Cover and cook until tender (about 15 minutes. Combine:

1 1/2 c. tomato sauce
2 tbsp. parsley

Pour a small amount in pan and add cauliflower and cover with remaining sauce. Combine:

3 tbsp. grated Parmesan cheese
2 tbsp. bread crumbs

Sprinkle over cauliflower. Drizzle 1 teaspoon salad oil over top. Bake at 425 degrees for 15 minutes or until browned.
