SWEET POTATO CASSEROLE 
1 lg. (30 oz.) can sweet potatoes
1 c. white sugar
1 egg
1/2 c. butter
1 tsp. salt
1 tbsp. vanilla
1/2 c. raisins
1/2 c. coconut

Beat together all ingredients except raisins and coconut -- fold these in. Place in 2 quart buttered casserole.

TOPPING:

Mix: 1/4 c. all-purpose flour 1/4 c. butter 1/2 c. chopped nuts (pecans preferred)

Spread over top of casserole. Bake 40 minutes in 350 degree oven. (You can half this recipe.)
